Time 1h55m

Number Of Ingredients 9

3 lb potatoes, peeled and chopped
4 large eggs, divided
1/2 c grated parmesan cheese
1 Tbsp fresh chopped parsley
2 tsp salt
2 Tbsp water
1 c all purpose flour
2 c seasoned bread crumbs
vegetable oil for deep-frying

Steps:

  • 1. Combine potatoes and enough water to cover in a large saucepan. Cook over medium-high heat until potatoes are tender, about 20 to 25 minutes; drain. Beat potatoes until slightly cooled. Beat 2 eggs in a small bowl. Add to potato mixture and mix well. Stir in Parmesan, parsley and salt. Shape into 15 (3-inch) patties. Combine remaining eggs and the water in a small bowl and mix well. Coat potato patties with flour, then dip in egg mixture. Coat with bread crumbs. Arrange in a single layer on a baking sheet. Chill, covered, for 1 hour. Preheat the oven to 275ºF. Preheat vegetable oil in a deep fryer. Deep-fry potato patties in hot oil until golden, about 3 minutes; drain on paper towels. Remove to a baking sheet. Bake for 10 minutes. Serve with spicy mustard, if desired.

I found that the potato patties were a bit bland. I added some garlic powder and onion powder to the mashed potatoes before frying them, and they were much better.

These potato patties were a bit too greasy for my taste. I think I will try them again with less oil.

I followed the recipe exactly and the potato patties turned out perfectly. They were crispy and golden brown on the outside, and fluffy and tender on the inside. I served them with ketchup and they were delicious!
