Goulash image

I am not sure why this called Goulash as it is nothing like the Hungarian Goulash that we also ate when I was a child. My mom would make this a couple of times a month for her 7 kids. I am sure that is was cheaper than the Hungarian Goulash, but was well loved and to this day is enjoyed by my family and friends that eat home...

Number Of Ingredients 10

1 lb box elbow macaroni, cooked and drained
1 1/2 lb lean ground beef
1 onion, chopped
1 bell pepper, chopped
2 qt tomatoes (i prefer home canned)
1 tsp kosher salt
1/2 tsp freshly ground black pepper
1 Tbsp dried parsley
1 tsp granulated garlic
1 lb cheddar cheese, shredded

Steps:

  • 1. Cook and drain macaroni and set aside. Brown ground meat with onions and peppers. Drain off grease.
  • 2. Add tomatoes and seasonings. Add to macaroni in a large ovenproof casserole dish. Stir in cheese and bake for 30 minutes at 350-degrees.
  • 3. Serve with a nice salad and a good crusty bread to sop up the juices. If there is leftovers they are good re-heated in a frying pan with a little water.
