GRANDMA MILLER'S BUTTERMILK PANCAKES image

2 cups flour
1 Tbs baking powder
1/2 tsp baking soda
1/2 tsp salt
2 eggs
2 cups buttermilk, + more
3 Tbs sugar
1/4 cup vegetable oil

Steps:

  • Set an electric griddle to 375 degrees. Coat surface with a small amount of vegetable oil or non-stick cooking spray. In a large bowl, mix together the first four dry ingredients. In a separate, smaller bowl, beat eggs and whisk in 2 cups buttermilk, oil, and sugar. Add wet ingredients to the dry mix and stir only to combine. Be careful not to over-mix. The batter should be slightly lumpy. If the batter seems too dry, add more buttermilk. Let rest for about 5 minutes. Working in batches, ladle/spoon approximately 1/2 cup batter for each pancake on to preheated griddle (adjust amount of batter accordingly for the size of the pan). Cook until there are many bubbles in the surface, and the edges look dry. Flip gently and cook through. Serve immediately with butter and warm maple syrup.
