Six medium-large Granny Smith Apples
2 cups instant oatmeal
1 cup brown sugar (lighten it even more by using one-half cup brown sugar mixed with one-half cup Splenda for baking)
One-half cup raisins, any kind;
One-cup sugar-free or no sugar added apricot preserves;
Three teaspoons ground cinnamon;
One cup apple juice (no sugar added);
One lemon, squeezed

Steps:

  • Thinly slice the apples (but not too thin); Combine all ingredients in a large bowl; Pour into 9x12 inch baking dish, sprayed with cooking spray; Bake in pre-heated 350 degree oven for 45 minutes until golden brown; serve warm or room temperature with frozen vanilla yogurt (optional) or Non-Dairy Topping such as Cool Whip.
