Great Grandma Johnson's Pineapple Drop Cookies image

These cookies are wonderfully moist and delicious! My Grandmother made the best cookies and these are some of my favorites. These need to be eaten within a couple days or they loose their moistness (I don't think they'll last that long in your house anyway!).

I had a hard time finding crushed pineapple, so I used pineapple tidbits instead. The cookies still turned out great, but I think they would have been even better with crushed pineapple.

These cookies were a bit too sweet for my taste, but I think that's just personal preference. They're still a good cookie, and I would recommend them to anyone who likes pineapple-flavored desserts.

I wasn't sure how I would like these cookies, but I was pleasantly surprised. They're so light and fluffy, and the pineapple flavor is subtle but still noticeable. I'll definitely be making these again.

I love the combination of pineapple and coconut in these cookies. They're so moist and chewy, and the pineapple flavor really shines through. I'll definitely be adding these to my regular baking rotation.
