Yield 4

Number Of Ingredients 15

1 lb. lean ground beef
1/4 cup Progresso™ Plain Bread Crumbs
1 to 2 garlic cloves, minced
1 teaspoon dried oregano leaves
1/2 teaspoon salt
1 egg
1 1/3 cups plain mashed potato mix (dry)
Water
Milk
Margarine or butter
Salt
1 1/3 oz. (1/3 cup) crumbled garlic and herb feta cheese
1/3 cup pitted kalamata olives, sliced
1/3 cup chopped seeded tomato
1/4 cup finely chopped green onions

Steps:

  • Heat oven to 375°F. In large bowl, combine ground beef, bread crumbs, garlic, oregano, 1/2 teaspoon salt and egg; mix well. Divide mixture evenly into 8 ungreased muffin cups. Pat in bottom and up sides of each cup to form crust.
  • In medium saucepan, prepare potatoes as directed on package using water, milk, margarine and salt. Add feta cheese; stir gently to mix. Fill beef-lined cups with potato mixture.
  • Place cookie sheet on oven rack below muffin pan in case of spillover. Bake at 375°F. for 15 to 20 minutes or until beef is thoroughly cooked. Remove cups from pan; place on individual serving plates. Sprinkle with olives, tomato and onions.

I'm not a huge fan of potatoes, but I love these cups! The potatoes are crispy on the outside and fluffy on the inside. The ground beef is also very flavorful.

I love that these cups can be made ahead of time. I usually make them the night before and then I just pop them in the oven when I'm ready to eat.

I'm not a fan of ground beef, so I used ground chicken instead. It worked out great and the cups were still very flavorful.

These cups are a great way to use up leftover mashed potatoes. I simply mashed some potatoes with some butter, milk, and salt and pepper, and then used them in place of the cooked potatoes.

I made these in muffin tins and they turned out perfectly! I think they would also be good made in a casserole dish.

I added some chopped onion and garlic to the ground beef and it really kicked up the flavor. I also used a sharp cheddar cheese and it melted perfectly.
