Green and Bleu Salad image

This salad is a treat for all the senses. I like it best with this lemony vinaigrette, but a light creamy dressing works well, too.

1 tablespoon apple cider vinegar
½ cup lemonade
1 tablespoon fresh lemon juice
1 tablespoon peanut oil
2 tablespoons honey
½ teaspoon salt
½ teaspoon ground black pepper
½ teaspoon celery seed
½ teaspoon hot sauce
6 cups torn romaine lettuce
2 green onion tops, chopped
½ green bell pepper, chopped
½ English cucumber, chopped
½ cup frozen green peas, thawed
2 stalks celery, sliced
½ Granny Smith apple, cored and chopped
16 seedless green grapes, halved
½ cup crumbled blue cheese

Steps:

  • Place the vinegar, lemonade, lemon juice, peanut oil, honey, salt, pepper, celery seed, and hot sauce in a blender. Puree until blended, then set aside for 30 minutes.
  • Place the romaine lettuce, green onions, green pepper, cucumber, peas, celery, apple, grapes, and blue cheese in a large bowl. Pour in the salad dressing and toss to coat.
