Greenbrier's Potatoes-Donna Jones Recipe image

Number Of Ingredients 7

5 pounds potatoes, peeled and sliced
2 cups whipping cream
2 garlic cloves, minced
1/2 ts. Salt
1/2 ts. Pepper
6 eggs, lightly beaten
3 1/2 cups shredded Parmesan cheese, divided

Steps:

  • Rinse potatoes with cold water; place in a large saucepan. Add the cream, garlic, salt and pepper; bring to a boil. Reduce heat; cover and simmer for 30 minutes or until potatoes are crisp-tender. Remove from heat; stir in eggs and 2 ¾ cups of cheese. Pour into a greased 13x9x2 inch-baking dish. Sprinkle with the remaining cheese. Bake uncovered, at 400º for 25-30 minutes or until potatoes are tender. Yield: 12-16 servings.
