Steps:
- Clean, devein and remove tails from shrimp Thread each skewer with 7 shrimp each (if using wooden skewers, let soak in water for 10 minutes prior to using to prevent sticking) Sprinkle shrimp with salt and pepper on both sides Place shrimp skewers on grill until done (roughly 3 minutes on each side). Shrimp should be pink and cooked through. While shrimp is grilling, toss all salad ingredients together in a large bowl and divide among 4 chilled plates. Remove shrimp from grill and skewers and divide evenly among plates, placing on top of salad. Top with Balsamic Vinaigrette and dig in!
