4 ounces shredded aged white Cheddar cheese
2 ears corn, grilled in husk and kernels removed
2 green onions, thinly sliced
Salt
Freshly ground black pepper
12 jalapeno chiles, halved, stemmed and seeded
1 heaping tablespoon ancho chili powder

2 red peppers, grilled, peeled and chopped
2 plum tomatoes, grilled until charred on all sides, and coarsely chopped

1/4 cup olive oil
Salt
Freshly ground black pepper

Steps:

  • Heat grill to medium.

I used a mix of different cheeses for the filling, including cheddar, mozzarella, and Parmesan. It was a great combination.

The sauce was a bit too acidic for my taste. I added a little bit of sugar to balance it out.

I added some cooked ground beef to the filling for extra protein. It was a great addition.

The stuffed jalapenos were a little too spicy for me, but the sauce was delicious. I'll definitely make this recipe again, but I'll use milder peppers next time.
