Guinness Chocolate Cake image

This is a wonderfully moist and delicious chocolate cake. Surprisingly, the beer really enhanced the flavor of the chocolate, and the sour cream helped to make it so moist. If you are a chocolate lover then this is a must try. (And it was easy too!)

1 c Guinness draft beer
3/4 c sour cream
1 stick unsalted butter (add 2 tbsp if you'd like)
2 eggs
1 Tbsp pure vanilla extract
3/4 c unsweetened cocoa
2 c all-purpose flour
3 c confectioner's sugar
2 1/2 tsp baking soda

Steps:

  • 1. Preheat the oven to 350F. Butter and line a 9-inch springform pan.
  • 2. Pour the Guinness into a large wide saucepan; add the butter - in spoons or slices - and heat until the butter's melted. Whisk in the cocoa and sugar.
  • 3. Beat the sour cream with the eggs and vanilla and then pour into the saucepan. Whisk in the flour and baking soda.
  • 4. Pour the cake batter into the greased and lined pan and bake for 45 minutes to an hour. Leave to cool completely in the pan on a cooling rack.
