Halibut au Gratin image

Number Of Ingredients 11

1 1/2 pounds halibut steaks, fresh or frozen
1 onion sliced
2 bay leaves
1/4 cup butter
4 tablespoons flour
2 cups milk
2 cups cheddar cheese soup sharp, shredded
3/4 teaspoon salt
black pepper
1/2 cup bread crumbs
1 tablespoon butter melted

Steps:

  • Arrange halibut on rack in skillet with a little water top with onion slices and bay leaves. Cover steam for 30 minutes. In meantime, melt butter or margarine in medium saucepan, stir in flour and add milk. Add salt and pepper to taste. Stir and cook until sauce thickens and becomes smooth. Add cheese stir until melted. (If mild Cheddar cheese is used, add a pinch of mustard and a little more salt to bring out cheese flavor.) Separate fish into serving-size pieces place in buttered 2-quart casserole. Pour over cheese sauce sprinkle with buttered crumbs. Bake at 350 degrees F. for 30 minutes or until bubbling hot.

The halibut au gratin turned out great! The fish was moist and flaky, and the sauce was rich and cheesy. The only thing I would change next time is to use a different type of cheese. I used cheddar, but I think a Gruyère or Parmesan would be even bet
