Honey Dijon Roasted Red Potatoes image

Similar recipes can be found on various websites, but this version adds a bit of bacon which gives the dish a little crunchy texture against the soft potatoes.

2 lb red potatoes, cut into bite-size pieces
2 Tbsp unsalted butter, melted
1/2 c honey
4 Tbsp dijon mustard
1 tsp dry mustard
1/8 to 1/4 tsp cayenne pepper
1/2 c cooked and crumbled bacon
1 tsp salt

Steps:

  • 1. Preheat oven to 425°F.
  • 2. Spray a 9x13-inch baking dish with no-stick cooking spray and place chopped potatoes inside.
  • 3. Add remaining ingredients to a small bowl and stir well until combined. Pour the sauce over the potatoes, and toss to evenly coat the potatoes.
  • 4. Bake for 25 to 35 minutes, or until they are tender.

These potatoes were a bit too sweet for my taste. I think I'll try them again with less honey next time.
