Steps:
- For Pita Chips: Pre-heat oven 350F. Cut pita chips in wedges or strips. combine all other ingredients in bowl add pita and toss to coat. Lay out on sheet pan in one layer. place in preheated oven for 10 min or until desired crispness. Remove from oven and cool. serve with hummus. Hummus: Mince garlic, place in food processor fitted with metal blade. Add chick peas, tahina, lemon juice and EVOO process until smooth. Add salt, white pepper and Zatar and pulse to incorporate. Taste and adjust seasoning. Add additional oil or lemon juice (depending on flavor) to adjust thickness of hummus. Place hummus on plate or in bowl, smooth out top drizzle with EVOO, chopped parsley, and pine nuts. toasted pine nuts: Place pine nuts in saute pan over med flame. Shake to turn until toasted. (Do not walk away this is a very fast process (1 min max)and can burn easily if left unattended)
