Time 40m

Yield 1

Number Of Ingredients 5

1 thick-skinned potato
3 tablespoons shredded Cheddar cheese, or to taste
1 egg
1 slice bacon, chopped
1 tablespoon chopped fresh chives, or to taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Poke potato with a knife to allow air to escape while cooking. Wrap potato in a damp paper towel. Cook in a microwave oven until tender, 4 to 6 minutes per side, depending on size.
  • Cut off top of cooked potato lengthwise. Scoop out flesh, leaving about 1/2-inch worth of 'crust.' Sprinkle lining of potato with 2 tablespoons Cheddar cheese. Break egg into potato and top with bacon, remaining Cheddar cheese, and chives.
  • Bake in the preheated oven until egg is set and cheese is melted, 15 to 20 minutes.

This recipe was a waste of time. The potatoes were mushy and the cheese and bacon were not melted.

The potatoes were not cooked all the way through. I had to put them back in the oven for an extra 10 minutes.

This recipe was a bit too greasy for my taste. The bacon and cheese were a bit overpowering. I would try using less bacon and cheese next time.

This recipe was a bit bland for my taste. I think it needed more salt and pepper. The potatoes were also a bit dry. I would try adding some more butter or oil next time.

This recipe was a great way to use up some leftover mashed potatoes. I simply formed the potatoes into patties, topped them with cheese, bacon, and eggs, and baked them in the oven. They turned out crispy on the outside and fluffy on the inside. So g
