Individual Breakfast Quiche image

I make these on the weekend and then freeze them. I heat one up in the microwave right before I head to work during the week. You can alter the ingredients and experiment with different spices, maybe add spinach, herbs, mushrooms, other kinds of meat like bacon, different kinds of cheeses.

6 eggs
1 lb sausage
1/2 c onion, chopped
1 clove garlic, minced
1/2 c whole milk
1/2 c grated cheese
1 tsp red curry powder
tube(s) pepper

Steps:

  • 1. Preheat oven to 350 degrees
  • 2. In a frying pan, brown sausage, onion and garlic together. Let cool in a bowl lined with paper towels to soak up grease.
  • 3. In a medium mixing bowl, whisk eggs with milk and curry powder. Add shredded cheese and stir.
  • 4. Once meat mixture is cooled to at least room temperature stir into egg mixture.
  • 5. Spray small ramekin baking dishes with olive oil cooking spray. Spoon egg and sausage mixture evenly between the ramekins until 3/4 full. Grind fresh pepper on top of each. Place all ramekins on a cooking sheet and place in the oven for 30 to 45 minutes or until toothpick stuck in the center comes out clean.
