Island Pork Tenderloin image

Number Of Ingredients 10

1 lb pork tenderloin
1/2 tsp salt
1/4 tsp pepper
1/2 tsp chile powder
1/2 tsp ground cumin
1/2 tsp cinnamon
2 Tbsp olive oil
1/4 c brown sugar, firmly packed
1/2 Tbsp fresh garlic finely chopped
1/2 Tbsp tabasco sauce or other hot sauce

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. Mix salt, pepper, cumin, chile powder, and cinnamon together. Coat all sides of pork.
  • 3. Heat oil in a 12 in skillet over moderately high heat and brown pork turning about 4 minutes.
  • 4. Mix brown sugar, garlic and tabasco until well combined. Place tenderloin in roasting pan or other baking dish. Spread brown sugar mixture all over the top of the tenderloin.
  • 5. Place in oven and bake for 20 minutes or until juices run clear.
