HAVE HAD THIS RECIPE FOR QUITE SOME TIME. MY FAMILY ENJOYED IT.

Number Of Ingredients 10

2 medium onions--chopped
6 clove garlic cloves--minced
1 lb chicken breast halves, skinless and boneless--cubed
2 can(s) cannellini beans--rinsed & drained
2 can(s) chicken broth--low sodium
2 can(s) diced tomatoes--undrained
1 tsp oregano--dried
1 tsp basil--dried
6 c spinach--fresh--chopped
shredded parmesan (opt)

Steps:

  • 1. IN DUTCHOVEN OR LG PAN, ADD ONIONS,GARLIC,--SAUTE UNTIL DONE. ADD CHICKEN CUBES, CHICKEN BROTH, TOMS., BASIL, OREGANO. COOK UNCOVERED UNTIL CHICKEN IS TENDER (OR YOU CAN PRE-COOK THE CHICKEN AHEAD OF TIME TO HASTEN THE TOTAL COOKING TIME)
  • 2. ADD CHOPPED SPINACH, HEAT UNTIL WILTED & DONE.
  • 3. CAN SERVE WITH PARMESAN CHEESE SPRINKLED ON TOP WHEN SERVING
