ITALIAN STIR FRY image

Yield 4 servings

Number Of Ingredients 8

2 boneless skinless chicken breast halves sliced in 1/2 inch thick slices
1 red pepper, cut into strips
1/2 large white or yellow onion, sliced
3 cloves garlic, minced
4 cups cooked white rice
olive oil to saute
2 T balsamic vinegar
1.5 cups spinach asiago dip

Steps:

  • Cook rice according to directions. While it's cooking, saute chicken slices in olive oil. When barely cooked through, remove from pan and hold in warm oven. Add more olive oil to pan and saute onions and peppers till soft. Add minced garlic and saute 1-2 minutes more. Add balsamic vinegar and turn vegetables to coat. Put chicken back into pan and mix well. Add dip and stir all till dip melts. Serve hot over cooked rice.

This recipe was a complete disaster. The sauce was too salty and the chicken was overcooked. I would not recommend this recipe to anyone.
