Number Of Ingredients 11

Topping:
6-8 slices of bacon, diced and cooked crispy
2 8-oz packages of cream cheese, soft
1 cup of mayonnaise
2-4 jalapenos, seeded, membranes removed, diced finely. The seeds and membrane will make it fiery hot. (Do you want them to eat it or just talk about it)
1 cup of cheddar cheese, shredded (I like to add more)
1 cup of jack cheese, shredded
1/4 cup diced green onion (I prefer mostly the white part, your preference.
1 cup of crushed crackers (Ritz is good)
1/2 cup Parmesan cheese
1/2 stick of butter, melted

Steps:

  • Preheat oven to 350. Combine all of the ingredients, Except the topping, into a medium bowl. Stir well. Transfer to an oven proof dish, perhaps a 9 X 13. The size of the dish depends on how thick you want the dip, just over 1 inch or inch and a half is good. You could also put in a small crock pot and start warming an hour before serving. The key is to make sure all the ingredients have melded together. Combine the topping ingredients and sprinkle all over the top of the dip. Bake the dip for 20-30 minutes or until bubbly.

I'm not a big fan of jalapeños, but this dip was still delicious. The cream cheese and cheddar cheese mellowed out the heat.
