This recipe is one of the best cookie recipes ever. I found this one in an Italian cookbook from the 1970's.

Categories     Cookies

Time 1h30m

Number Of Ingredients 9

2 c all purpose flour
3/4 c butter, softened
1/2 c sugar
2 eggs
grated peel of 1 lemon (optional)
1/8 tsp salt
1 beaten egg
strawberry, apricot, peach or any other perserves that you like
confectioners sugar, optional

Steps:

  • 1. Place flour on pastry board. Make a well in the center. Put butter, sugar, 2 eggs, (grated lemon rind) and salt into the well. Work the flour mixture gently with your hands and form into a ball.
  • 2. Cover with clean towel and let rest for 1 hour. With rolling pin, roll dough to 1/4" thickness and cut out 3" circles (I use a drinking glass for this).
  • 3. In the center of each circle of dough, place 1/2 tsp. of preserves then fold dough in half and crimp with fork to close edges. Brush the dough with the beaten egg.
  • 4. Preheat oven to 350 degrees. Place cookies on cookie sheet and bake for 10-15 minutes. Remove them from the oven and serve.
  • 5. Optional: after removing cookies from oven you can sprinkle them with confectioner sugar...I never do but the recipe offers this option.

These cookies were a bit dry. I think I overbaked them. I would recommend baking them for a few minutes less.

I found that these cookies were a bit too sweet for my taste. I would recommend using a less sweet jam, or reducing the amount of sugar in the dough.

These cookies are a bit messy to make, but they're so worth it. The jam filling can be a bit runny, so be careful when you're folding the dough over.

These cookies are a great way to use up leftover jam. I had a jar of strawberry jam that was about to go bad, so I decided to make these cookies. They turned out great!

I love the versatility of these cookies. You can use any type of jam you like, so you can always have a different flavor. I've made them with strawberry, raspberry, and blueberry jam, and they're all delicious.
