I learned to make this in a middle school home-ec class. The teacher called them "Captain Crunch Cookies" because when strawberry Jello is used they taste somewhat similar to Crunch Berries. These cookies taste better if you let them cool completely!

Number Of Ingredients 8

3/4 c shortening
3/4 c sugar
1 tsp vanilla extract
3 large eggs
3/4 tsp salt
1 pkg (3 oz) fruit flavored jello
1 tsp baking powder
2 3/4 c all purpose flour

Steps:

  • 1. Cream together the shortening, sugar and vanilla. Add eggs, salt, jello, baking powder and flour. Mix well until a soft dough forms. Roll into balls and place on a hot, greased, waffle iron. Close lid and bake for approximately 2 minutes. Times will vary with waffle makers. These cook faster than normal breakfast waffles.

I'm allergic to strawberries, so I used raspberry Jell-O instead. They turned out great!

These cookies were a bit too dry for my taste. I think I'll add some extra butter next time.

I'm not a big fan of Jell-O, but these cookies were actually really good. The waffle mix balances out the sweetness of the Jell-O perfectly.

I had some trouble getting the cookies to hold their shape. They spread out too much in the oven. I'm not sure what I did wrong.

I've made these cookies several times now and they always turn out perfect. They're crispy on the outside and chewy on the inside, and the Jell-O flavor really shines through. I love serving them with a scoop of ice cream.
