Joe's Special (Ground Beef, Spinach & Eggs) image

According to my cookbooks, Joe's Special is a San Francisco specialty dating to the 1920's. I have seen several versions; what they all have in common is ground beef, spinach and eggs. This is not fancy, but it makes a great main dish for a light supper or brunch. I like to serve this with toasted Beer Bread and a fresh fruit salad.

This recipe was a disaster. The eggs were overcooked and the spinach was mushy.

I wasn't a big fan of this recipe. The spinach was too overpowering for me.

This dish is a great way to use up leftover ground beef. I also like to add some crumbled sausage or bacon for extra flavor.

This recipe was easy to follow and the dish turned out great. I used a blend of ground beef and Italian sausage, which gave the dish a nice flavor. I also added some chopped mushrooms and bell peppers, which made it even more hearty.

This dish was a hit with my family! The combination of ground beef, spinach, and eggs was delicious, and the seasonings were perfect. I especially liked the addition of the Parmesan cheese, which gave the dish a nice cheesy flavor.
