Johnny Cakes are delicious, easy and quick to make fried cornbread cakes made with pantry staples. Cornbread lovers consider yourself warned because these little nuggets are so tasty. Number Of Ingredients 10

1 c flour
1 c cornmeal
2 tsp baking powder
2 Tbsp sugar
1/2 tsp salt
2 large eggs (room temperature)
3/4 c buttermilk
1/2 c water
1/4 c melted butter (slightly cooled)
vegetable oil or butter for frying

Steps:

  • 1. In a medium bowl whisk together the flour, cornmeal, baking powder, sugar and salt.
  • 2. In a separate medium bowl whisk together the eggs and buttermilk. Add the water and melted butter to the egg mixture whisking just until combined. Now add the wet ingredients to the dry ingredients stirring just until combined.
  • 3. Heat a little bit of vegetable oil in a large skillet over medium heat. Add 2-3 tablespoons batter for each cake to the pan. Cook until bubbles form on the top and the edges are a deep golden brown. Flip and cook until the other side is golden brown. For best results serve promptly.
