KALAMATA-LEMON CHICKEN image

Number Of Ingredients 9

1-1 1/4 lb skinless boneless chicken thighs
1 T olive oil
2/3 c dried orzo
1/2 c drained, pitted kalamata olives
1 14 oz can chicken broth
1/2 lemon cut in wedges
1 T lemon juice
1 t dried Greek seasoning
snipped fresh oregano (opt)

Steps:

  • 1. preheat oven to 400 Brown chicken in 4 qt Dutch oven in oil over med-hi heat for 5 min, turning once. Stir in orzo, olives, broth, lemon wedges & juice, Greek seasoning, salt & pepper. Cover-bake 35 min. 2. serve in shallow bowls with additional broth, if desired, & snipped oregano.
