Kevin's Chili (The Office) image

Number Of Ingredients 16

3 pounds Chuck Steak - Finely Diced
6 pieces Roma Tomatoes - Peeled, cored and chopped
1/2 cup Red Kidney Beans - Soaked
1/2 cup Chili Beans - Soaked
4.5 ounces Dried Chilis (Ancho, Santa Fe, Guajillo)
1 piece Jalapeno - diced
3 cloves Garlic - diced & mashed
12 ounces Beer - Light Lager
1 tablespoon Cumin
1 tablespoon Cocoa Powder
3 tablespoons Corn Starch (use sparingly)
1 tablespoon Oregano
4 cups Chicken Stock
2 tablespoons Brown Sugar
2 teaspoons SALT!
2 pieces Onions - chopped

Steps:

  • Brown diced chuck steak in grapeseed oil a little at a time. Add beer to loosen the fond.
  • Deseed and chop peppers into 1" squares and grind in food processor all the way to powder.
  • Add jalapeno, garlic, cumin, oregano, cocoa powder corn flour and 3/4 C stock to food processor and mix well.
  • Sweat onions in chili pot. Add meat, beer, sugar, salt and dried pepper paste, remaining stock and beans to the pot.
  • To soak beans, cover with 2" of water, bring to a boil, turn off and soak for at least 60 minutes.
  • Cook 2-3 hours at 300 in covered pot in oven.
