BASE:
250g Digestive Biscuits (or Graham crackers)
125g butter
2 Tablespoons butter
FILLING:
560ml double cream
680ml condensed sweetened milk

  • Pulverise biscuits in a mixer with the butter and sugar. This should form a fine crumb mixture. Press this into the bottom of your pie dish. Then bake this for 8 minutes at 150 degrees celcius (290 farenheit). Take out - and let base cool. Zest the lemons. Then juice them. Whip the cream till it gets a bit thicker. Mix tin the condensed milk, zest and lemon juice. Pour this mix into the pie dish over the cooled base - and put into the fridge to chill.

This pie was a bit too tart for my taste, but my husband loved it. I think I'll try adding a little more sugar next time.

This pie was a bit too sweet for my taste, but I think that's just a matter of personal preference. I'll definitely be making this again, but I'll use less sugar next time.

I had some trouble getting the crust to brown evenly. I think I might have rolled it out too thick.
