2 (0.3 ounce) packages sugar-free orange gelatin mix (such as Jell-O®)
2 cups boiling water
1 (11 ounce) can mandarin oranges (no sugar added), drained with juice reserved
1 small orange, juiced
¼ cup sugar-free orange drink (such as Crystal Light Sunrise Classic Orange®)
¾ cup ice cubes, or as needed
1 cup frozen sugar-free whipped topping (such as Cool Whip®), thawed

This salad is a great way to use up leftover fruit. I had some oranges and bananas that were about to go bad, so I threw them in this salad and it turned out great. The oranges added a nice tartness and the bananas added a sweetness.

I was pleasantly surprised by how delicious this salad was. I'm not usually a fan of jello salads, but this one was light and refreshing. The orange flavor was perfect and the whipped topping added a nice touch of creaminess.
