- Brown bacon in large stock pot, pour bacon grease from pan leaving only a fine film. You may cook bacon in the microwave and just add a small amount of bacon grease to stock pot. Crumble bacon and set aside. In a seperate pan fry sausage and ground beef and set aside with bacon. Cook onion, green pepper, garlic and jalepeno in grease in stock pot over low heat for 2 to 3 minutes. Stir in mustard, celery seed, chili powder, salt and pepper, simmer 10 minutes. Mash tomatoes. Add with liquid and meat to onion mixture heat to boiling; reduce heat and simmer, covered 30 minutes stirring frequently. Stir beans with liquid into chili, heat to boiling. Reduce heat, cover and simmer 1 hour stirring occasionally. May also make a day ahead of serving as get even better flavors blend.
