Mandarin Chicken image

Easy chicken dish with a tropical flavor.

Number Of Ingredients 11

4 boneless, skinless chicken breasts, about 1 pound
1 can(s) (11 ounce) mandarin oranges, juice drained and reserved
1/2 tsp pepper
2 Tbsp orange juice concentrate
oz (12 ) pineapple juice
2 Tbsp orange marmalade
1 tsp crushed red pepper (optional)
1 Tbsp corn starch
1/2 tsp salt
1/2 tsp ground ginger
1 Tbsp sesame oil

Steps:

  • 1. Combine drained juice, 6 ounces of the pineapple juice, and pepper. Pour over chicken, cover, and refrigerated 1-2 hours.
  • 2. Remove chicken; discard marinade. Heat oil in skillet, add chicken, and cook over medium heat until done, about 15 minutes.
  • 3. Stir remaining ingredients in a pan over high heat until thickened. Spoon sauce over chicken.
