I wanted to have several lady friends over for a lite lunch meal on a hot Summer's day years back. Pondering on what to serve them, I came up with the idea of offering several interesting salads. Number Of Ingredients 12

3 c cooked chicken, diced
1 c celery, diced
2 Tbsp lemon juice
1 Tbsp onion, minced
1/2 tsp salt
1/3 c mayonnaise (i use kraft with olive oil or miracle whip)
1 c seedless grapes
1 (11 ounce) can mandarin oranges, drained
1 pkg (2 ounce) slivered almonds, toasted
leaf lettuce
additional mandarin orange slices (optional)
clusters of green grapes (optional)

Steps:

  • 1. Combine first 5 ingredients, stir well. Cover and chill. Add mayonnaise, grapes, oranges, and almonds to chicken mixture; toss well. Serve on lettuce. Garnish with additional orange slices and grape clusters, if desired.

This salad was okay. It wasn't as flavorful as I expected and the chicken was a bit dry. I think I'll try a different recipe next time.

This salad was a bit too sweet for my taste. I think next time I'll use less mandarin oranges or add some chopped cucumber to balance out the sweetness.

I've made this salad several times and it's always a crowd-pleaser. It's so easy to make and the flavors are amazing. I love the combination of the sweet mandarin oranges, the salty chicken, and the crunchy almonds. I highly recommend this salad!

This salad was really good! I made it for a potluck and it was a hit. I used canned mandarin oranges, but I think fresh would be even better. I also added some chopped celery and green onions for extra crunch. Will definitely make this again!
