Mandarin Glazed Beets image

This is a wonderful recipe I make during the holidays. It's an old recipe from Taste of Home magazine that makes for a very unusual and unexpected surprise on the holiday table! Everyone LOVES these!! Best served room temperature. (Not hot.) Photo by Taste of Home

Number Of Ingredients 6

1/4 cup sugar
2 tsp. cornstarch
1/4 cup lemon juice, fresh or concentrate but fresh is better
2 Tbl. butter
2 (15 oz.) cans sliced beets, drained
1 (11 oz.) can mandarin oranges, drained

Steps:

  • 1. In a large saucepan, combine the sugar and cornstarch. Add lemon juice and butter. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in beats; heat through. Gently stir in oranges; heat through.
