Steps:
- Combine potatoes, salt and vanilla in a mixing bowl.
- Sift powdered sugar over mixture, stirring and adding 1 cup at a time. Mixture will liquefy first, then gradually begin to thicken. Continue until it becomes a stiff dough. (It may take more or less than 2 pounds of powdered sugar.)
- Knead.
- Cover with a damp cloth and chill until a small spoonful can be rolled into a ball.
- Dip 1/2-inch balls in melted chocolate and roll in nuts.
