Number Of Ingredients 7

5 1/2 pounds Sweet Potatoes, peeled and boiled until soft (approx. 6 cups cooked)
3/4 cup 1% Milk
3 tablespoons light Butter, softened
1/2 teaspoons Salt
1/4 teaspoon ground Cinnamon
1/8 teaspoon ground Nutmeg
1/2 cup unpacked light Brown Sugar

Steps:

  • Preheat the broiler. Then cook sweet potatoes by boiling until soft. When the potatoes are cooked and soft, combine them with milk, light butter, salt, cinnamon and nutmeg and mash or puree until smooth. Spoon into a 9 x 9 or 11 x 7-inch baking dish. Sprinkle 1/2 cup brown sugar evenly over top. Broil 2 minutes or until sugar melts, careful not to burn. Let it stand until the melted sugar hardens (about 5 minutes).

I had some trouble getting the brûlée topping to caramelize. I think I might have used the wrong torch.

This recipe was a little bit too sweet for my taste. I think I'll use less maple syrup next time.

The only thing I would change about this recipe is to add a little bit more salt. Other than that, it's perfect!
