Number Of Ingredients 15

2 tablespoons butter
1/2 cup onion, thinly sliced
1/2 pound cremini mushrooms
1/4 cup buttermilk
1 tablespoon tamari
1 tablespoon Worchestershire sauce
1/2 cup oats, old fashioned
2 eggs
1 1/4 pounds ground beef
3/4 pound ground turkey or pork
1/4 cup ketchup
1/2 cup hoisin
1/2 cup ketchup
1/4 cup rice vinegar
3 tablespoons chili oil

Steps:

  • Saute onions and mushrooms in butter. Transfer to a food processor and pulse.
  • Combine buttermilk, tamari, 1/4 cup ketchup, Worcestershire, oats and eggs. Set aside to soak.
  • Combine mushroom mix, ground meats and soaked oats plus about 1 teaspoon kosher salt and pepper.
  • Put in lined loaf pan. Brush top with 3 tablespoons of ketchup
  • Bake at 350 until internal temp is 145 degrees. (Check at 45 minutes.)
  • Make hoisin sauce with hoisin, ketchup, rice vinegar and chile oil in a small saucepan. Bring to a boil and simmer 10 minutes.
  • Remove meatloaf from pan and brush sides and top with remaining 3 tablespoons ketchup. Blast under broiler for a few minutes.
