Time 4m

Yield 1 serving, 1 serving(s)

Number Of Ingredients 5

1/2 cup raw oats
3/4 cup water
3/4 cup pasteurized liquid egg-whites
1 tablespoon peanut butter
artificial sweetener, to taste (e.g. Splenda, stevia)

Steps:

  • Add oats and water to a microwave-safe bowl.
  • Microwave on medium power for approximately 1 minute and 30 seconds. Keep your eye on the bowl as oatmeal has a tend to boil over in the microwave.
  • Remove from microwave and stir in the peanut butter and stevia until well-blended. Stir in the egg whites until well-blended.
  • Microwave on medium power for 1 minute.
  • Remove and check the consistency. Eggs should be smooth, not scrambled or watery. If you would like it cooked a little more, microwave in 10-second increments on high, checking each time for consistency. Don't cook it too much or it will get curdled.
  • Enjoy!

This recipe is a great starting point, but I like to add some extra ingredients to make it more flavorful. I usually add a teaspoon of vanilla extract, a pinch of cinnamon, and a handful of chopped nuts.

I followed the recipe exactly, but my oatmeal turned out too watery. I think I'll try using less almond milk next time.
