MIMI'S MEXICAN MEATLOAF
This recipe caught my attention because it had cocoa and cinnamon as ingredients. This has turned out to be a family favorite. Definitely not your everyday meatloaf.

Steps:
- 1. Preheat oven to 350. In a large bowl combine meat, eggs, bread crumbs and mix well.
- 2. In a medium bowl, combine remaining ingredients and mix well. Add 3/4 cup of salsa mixture to meat mixture and mix well. Put meat mixture into an ungreased 1 1/2 to 2 quart casserole or 9 x 5 loaf pan. Shape mixture into a loaf shape.
- 3. Bake at 350 for 50 minutes. Remove from oven and spoon remaining sauce over top of meatloaf. Return to oven and bake an additional 20-30 minutes or until thoroughly cooked and center reads 160 degrees on an instant-read thermometer.
