These mini meatloaves are a great way to meal prep for the week. I often make a batch of them on the weekend and then reheat them for lunch or dinner throughout the week.

I made these mini meatloaves ahead of time and froze them. When I was ready to serve them, I just thawed them in the refrigerator overnight and then baked them in the oven. They were just as good as when I made them fresh.
