This is a pie to make when you don't have apples but you have everything else. It is actually pretty good. You can also make it in a bar pan to make slices, just drizzle a little icing over the top. This is a very old recipe of my great grandmother Sullivan who had 15 children... She knew how to feed them and keep them...

Time 50m

Number Of Ingredients 6

1 can(s) (16-ounces) applesauce
1 sleeve of crackers broken up
1 c brown sugar
1 tsp cinnamon, ground
1 large lemon (juice and zest)
1/3 c water

Steps:

  • 1. Mix all ingredients together in a bowl. Let sit for 10 minutes.
  • 2. Pour the apple mixture into an unbaked pie shell. Dot the top with butter (about a half a stick). Put a top crust on. Make slits in top for steam to escape.
  • 3. Bake in preheated 400 degree oven for 35 minutes. Or until bubbly and golden brown. Be watchful so it doesn't burn.

I'm not a big fan of Ritz crackers, but I was pleasantly surprised by how well they worked in this pie. The filling was delicious and the crust was flaky and buttery.

The Ritz cracker crust was a bit too salty for my taste. I might try using graham crackers next time.
