Most Amazing Reuben Casserole image

If you like Reubens, your going to LOVE each rich, buttery, creamy bite of this dish! My mother used to make this, it's pretty quick and easy and the end reward is wonderful!!

Number Of Ingredients 8

8 slices rye bread, toasted & cubed- make sure it's the hearty variety
1 (14 1/2 ounce) can sauerkraut, drained
1 (12 ounce) can corned beef, crumbled
1 small onion, diced
1 cup sour cream
8 ounces mozzarella cheese, shredded
8 ounces swiss cheese, shredded
5/8 cup butter, melted

Steps:

  • Layer half the bread cubes in the bottom of a greased 9x13 casserole dish.
  • Mix the sour cream and onion together.
  • Layer sauerkraut, crumbled corned beef, sour cream mixture, and cheeses over the bread.
  • Spread remaining bread cubes over top.
  • Drizzle with melted butter
  • Bake 350 for 30 minute.
