My Grandmas Thundercake image

This wonderful old recipe comes from a children's storybook that I came across when I was shelving away books in a school library. The book by Patricia Polacco entitled "My Grandma's Thunder cake is one of a series of kid's books with easy recipes included in the story. One other that comes to mind is "A Cranberry Thanksgiving"...

Number Of Ingredients 12

CREAM TOGETHER ONE AT A TIME:
1 cup of shortening
1 1/4 cups of sugar
1 tsp. vanilla
3 eggs, separated blend yolks in. beat whites until they are stiff,then fold in
1 cup of water
1/3 cup of pureed tomatoes.
SIFT TOGETHER:
2 1/2 cups of cake flour
1/2 cup of dry cocoa powder
1 1/2 tsp. baking soda
1 tsp.salt

Steps:

  • 1. Mix dry mixture into creamy mixture
  • 2. Bake in two greased and floured 8 1/2-inch round pans
  • 3. Bake at 350 F for 35-40 minutes or until a wooden toothpick comes out clean when inserted in middle of the cakes
  • 4. Frost with chocolate butter frosting
  • 5. Top with strawberries
