Steps:
- Cut onions into 1/4-in. slices and separate into rings. In a shallow bowl, combine the flour, salt, baking powder and pepper. In a small bowl, combine the egg, apple juice and oil; stir into dry ingredients just until moistened. , In an electric skillet or deep-fat fryer, heat 1 in. of oil to 375°. Dip onion rings into batter. Fry, a few at a time, for 2-3 minutes on each side or until golden brown. Drain on paper towels.
