Ooh la-la chicken a l'orange image

This is pretty easy to make and very scrumptious. I've had similar recipes like this at restaurants, but I love this easy to make dish.

8 shallots, peeled, halved lengthwise
2 Tbsp olive oil
salt & pepper
3-1/2 lb cut up chicken pieces; legs, thighs, wings, breasts
1/2 c orange marmalade
1 Tbsp white wine vinegar
1 Tbsp chopped fresh rosemary

Steps:

  • 1. Heat oven to 425. Lightly spray a lg shallow roasting pan w/ olive oil cooking spray. Toss the shallots w/ 1 tbsp oil and 1/4 tsp each salt & pepper.
  • 2. In lg bowl, whisk together marmalade, vinegar, rosemary, remaining oil, 1/4 tsp salt & pepper. Add the chicken and toss to coat.
  • 3. Place the chicken mix into pan, on top of the shallots. Bake about 30 mins, or until chicken is cooked through.
