3 medium carrots, peeled and cut in 2-inch chunks
1 large onion, peeled and cut in eighths
1 celery rib, trimmed and cut in half
8 small red new potatoes, scrubbed
1/2 cup brown sugar
1 cup orange juice
1 tablespoon prepared spicy brown mustard
1/4 teaspoon brown mustard seeds
6 allspice berries
8 whole black peppercorns
2 whole cloves
1 cinnamon stick, 2-inch long
4 1/2 lbs corned beef
1/2 head green cabbage, shredded (about 1 lb cabbage)

Steps:

  • Combine all ingredients except cabbage in a large crock pot. Cook on low 8-10 hours.
  • Add cabbage and cook one additional hour.
