Yield Around 12 puffs

Number Of Ingredients 4

Peanut oil for deep frying
3 large egg whites
1 cup freshly grated Parmesan cheese
1/4 teaspoon cayenne pepper

Steps:

  • In a Dutch oven, heat 2 inches of oil to 375 degrees.
  • Beat the egg whites until stiff peaks form, then fold in Parmesan and cayenne with a rubber spatula. These puffs are a great way to get kids to eat their vegetables. My kids love them and they don't even realize they're eating broccoli.

I'm not a big fan of Parmesan cheese, but I actually really liked these puffs. The cheese flavor is subtle and it doesn't overpower the other ingredients.
