Steps:
- Preheat oven to 375 degrees. Spray a shallow baking dish with olive oil. Cut potatoes into wedges and place in dish. Size will depend on size of potatoes. in a bowl combine: broth, lemon juice, butter, oregano, salt, pepper and minced garlic, parsley flakes. Pour over potatoes and be sure all are coated well. Cover dish tightly with heavy foil and bake for 40 minutes. Uncover, sprinkle Parmesan over potatoes and return to oven for another 20-30 mins are until potatoes are tender.
