A deliciously simple salad that was posted by Smart Balance. The nuts were not included in the original recipe, but I think they compliment the salad well.

I'm not a big fan of arugula, but I really enjoyed this salad. The peaches and balsamic dressing were so good that I didn't even miss the arugula.

I love the addition of goat cheese to this salad. It adds a creamy richness that balances out the acidity of the dressing.

I found the dressing to be a bit too tangy for my taste. I added a little bit of honey to balance it out.

I'm not a big fan of arugula, so I used spinach instead. The salad was still very good, but I think I would have liked it better with arugula.
