Peas with Mint image

Fresh mint in the garden, and peas are coming into season. Here's a way to dress them up.

Number Of Ingredients 8

1/4 c chopped celery
1/2 c chopped carrots
1 Tbsp butter
1 Tbsp olive oil
1/4 c water
1-2 Tbsp chopped fresh mint leaves
2 c green peas, fresh or frozen
just a pinch of salt, to taste

Steps:

  • 1. Sauté celery and carrots in the butter and olive oil until celery softens. Add the water and mint leaves and simmer about 10 minutes until carrots are cooked.
  • 2. Add peas, cover, and steam over low heat until peas are done to your liking. Add salt to taste. Stir well before serving.
