Pigs in a Blanket Pancake Muffins image

Chunks of breakfast sausage are baked into these easy muffins. Serve with a drizzle of syrup!

1 cup Hungry Jack® Buttermilk Pancake & Waffle Mix
⅔ cup milk
2 eggs
1 tablespoon vegetable oil
1 tablespoon Hungry Jack® Original Syrup, plus more for serving if desired
4 fully cooked sausage links

Steps:

  • Preheat oven to 350 degrees F.
  • Add the pancake mix, milk, eggs, oil, and syrup to a medium mixing bowl and whisk to combine.
  • Chop the cooked sausage links into small pieces and stir into the batter.
  • Pour batter 2/3 full into a greased or lined muffin tin.
  • Bake for 13 minutes or until a toothpick inserted comes out clean.
  • Serve with extra syrup, as desired.
