Pineapple Chipotle Salsa image

This beautiful dip will brighten up any holiday appetizer spread with its delicious sweet and spicy twist!

1 cup diced fresh pineapple
1/4 cup finely chopped red onion
1/2 cup chopped roasted red bell pepper (from a jar)
1 chipotle chile in adobo sauce, finely chopped
1/4 cup chopped fresh cilantro leaves
1 tablespoon fresh lime juice
1 tablespoon honey
1 teaspoon freshly grated gingerroot
1/4 teaspoon salt
Food Should Taste Good pumpkin chips, as desired

Steps:

  • In large bowl, mix all ingredients except chips.
  • Cover and refrigerate until needed; serve with chips.
